Mexican Meat Loaf

Using a single Mudflap Jones Chili Mix packet

 

3 lbs 80% lean ground chuck

2/3 -cup or 1 package of Mudflap Jones Chili Mix Seasoning

or (1/2 cup for Sugar Free Taco Seasoning)

2-eggs

-cup bread crumbs plain or Italian

1/3-cup finely chopped onion

1 finely chopped Poblano pepper (1/2 cup)

Chop up a 1 lb or 3-cups of shredded Sharp Cheddar or Pepper Jack cheese

 

Mix all the above ingredients together in a large bowl

Cover and place in the refrigerator

Marinate for 2 or more hours

After 2 hours:

Pack meat in a meatloaf or bread loaf pan

Pre-heat oven to 350 degrees

Place the meatloaf on a larger cookie sheet in oven for 2 hours, cover with foil

Uncover about the last hour  (165 deg. If using a meat thermometer)

Top with Ro-Tel diced tomatoes (or salsa) & shredded cheese

Serving Suggestion:

Cut into 1 square strips for taco filling

Cut into 1 slices for taco salads or tostadas
